These last few months have been crazy for Lance and I. Between Lance studying for his EMT exam and me studying for a work exam, our wedding planning and full-time jobs we haven’t had a lot of time for anything else. We’ve been making a lot of quick and easy meals and snacks at home. It’s important for us to eat relatively healthy even though we don’t have a lot of time to prep and cook the food. There aren’t any fast food places in our town so that definitely helps too! These energy bites are one of our favorite snacks we’ve been making lately. They are healthy but yet still feel like you are eating a treat. We love the peanut butter and chocolate combo! I bring 2 or 3 to work and look forward to having them for a snack during the day.

Yield: 20 – 1 inch balls
Prep Time: 35 Minutes (5 Minutes Prep and 30 Minutes in the Refrigerator)
Cook Time: 5 Minutes
Total Time: 40 Minutes
Ingredients
1/2 cup creamy peanut butter
1/4 cup honey
1 teaspoon vanilla extract
1 cup rolled oats
2/3 cup shredded coconut
6 tablespoons chocolate chips
Instructions
Preheat oven to 350 degrees. Spread shredded coconut on a sheet pan. Bake for 5 minutes. Let cool.
In a medium bowl combine peanut butter, honey and vanilla extract. Add remaining ingredients and mix well. Cover bowl with plastic wrap and put in refrigerator to chill for 30 minutes to allow mixture to firm up. After 30 minutes take out of the refrigerator and shape into one inch balls.
Place in an airtight container and store in refrigerator.
